- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 cup MamaStrength Obsidian Lentils, rinsed
- 4 cups vegetable broth
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 tsp dried thyme
- 1 bay leaf
- 2 cups chopped kale or spinach
- Salt and black pepper to taste
- A squeeze of lemon juice (optional)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the rinsed Obsidian Lentils, vegetable broth, diced tomatoes, thyme, and bay leaf. Stir to combine.
- Bring the stew to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until lentils are tender but not mushy.
- Remove the bay leaf. Stir in the chopped kale or spinach and cook for another 2-3 minutes until wilted.
- Season generously with salt and pepper. Add a squeeze of fresh lemon juice before serving to brighten the flavors.

Instructions
- Melt coconut oil in a large pot over medium heat. Add onion and cook until soft, about 5 minutes.

- Add the rinsed red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until lentils are very soft.
- Stir in the coconut milk. Use an immersion blender to blend the soup until smooth and creamy. Alternatively, carefully transfer in batches to a regular blender.

Instructions
- Heat the oil in a medium-sized pot over medium heat. Add the onion and sauté until soft and translucent.
- Add the garlic and cook for another minute until fragrant.
- Stir in the black beans, corn, chopped tomatoes, and diced potato.
- Pour in the vegetable broth and season with paprika, salt, and pepper.

- 1/2 cup rolled oats
- 1/4 cup unsweetened cocoa powder
- 2/3 cup maple syrup or honey
- 1/4 cup coconut oil, melted
- 2 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup dark chocolate chips, divided
Instructions
- Preheat oven to 350°F (175°C). Lightly grease an 8x8 inch baking pan or line with parchment paper.
- In a high-speed blender or food processor, combine the rinsed black beans, rolled oats, cocoa powder, maple syrup, coconut oil, vanilla, baking soda, and salt.
- Blend until completely smooth. You may need to scrape down the sides a few times to ensure there are no bean chunks left.
- Stir in 1/4 cup of the chocolate chips into the batter.
- Pour the batter into the prepared pan and smooth the top. Sprinkle the remaining 1/4 cup of chocolate chips over the top.
- Bake for 28-32 minutes, or until a toothpick inserted into the center comes out mostly clean. The brownies should look set on top.
- Let the brownies cool completely in the pan before slicing. This is crucial for them to set properly. For best results, chill in the fridge for an hour before cutting.

Instructions
- Cook the Obsidian Lentils according to package directions (approx. 20-25 minutes). Drain well and let them cool completely.
- In a food processor, combine the cooked and cooled lentils, pitted dates, rolled oats, ground flaxseed, chia seeds, cocoa powder, and salt.
- Pulse until the mixture starts to come together into a thick, sticky dough. If it's too dry, add 1 tablespoon of water at a time until it holds together when pressed.
- Using your hands, roll the mixture into small, bite-sized balls (about 1 inch in diameter).
- Place the energy bites on a parchment-lined plate or container.
